Lamb Tagine


Serves 6-8

1/4 tsp saffron threads
150 ml (1/4 pint) hot water

3 tbsp olive oil

1.5 kg (3lb) boneless shoulder of lamb, trimmed and cut into 2.5 cm (1 in) cubes

1 Fennel bulb, trimmed and sliced crosswise

2 green peppers, cored, seeded, and cut into strips

1 large onion, sliced
30 g (1 oz) plain flour
1/2 tsp ground ginger
450 ml (3/4 pint) lamb stock or water
grated zest and juice of 1 orange

125 g (4 oz) ready-to-eat dried apricots
salt and black pepper

mint sprigs to garnish

Method

1. Prepare the saffron. (Put the saffron threads into a small bowl, add the measured hot water, and soak for 10 minutes). Heat the oil in a flameproof casserole, add the lamb in batches, and cook over a high heat for 5 minutes or until browned. Lift out and drain on paper towels.

2. Lower the heat, add the fennel, peppers, and onion, and cook gently, stirring, for 5 minutes.

3. Add the flour and ground ginger to the vegetables and cook, stirring occasionally, for about 1 minute. Add the saffron liquid to the casserole, return the cubes of lamb, then add the stock, orange zest, and salt and black pepper to taste. Bring to a boil, cover, and cook in a preheated oven at 160 C (325 F, Gas 3) for 1 hour.

4. Add the orange juice and apricots and cook for about 30 minutes until the lamb is tender. Taste for seasoning and garnish with mint sprigs before serving.

Friendly Tip: If like me you find the taste of sweet and sour a bit too much for your palate, omit the Apricots from your meal. Something else to bear in mind is to perhaps serve a plain cous cous and not have too much other flavors with the lamb as this may take away from it's overall taste.

My desire to cook different mains (other than West Indian) and deserts continue, though I fear I may be putting on weight and that is a bit scary to contemplate for someone who has ranged between the 119-126 from the age of 15... I must ask my friends whether I am or not.

Then again maybe I need new glasses...

Today's meal was Pork with Chili and Coconut, served with Angel Hair pasta... it was decidedly different and offered a new taste to the palate. I enjoyed it quite a lot and after last weeks meal it was a definite thumbs up. My taste buds were screaming in ecstasy and my tummy was rejoicing at receiving something that tasted well together. I am beginning to realize that the more I cook the easier it seems weekly and the less time required to complete each meal... then again maybe it's the meals I chose to make. Today's main course took about an hour to make and required minimum effort... who knew you could serve up such a delicious meal so easily and quickly, let's just say that had I known I would have started cooking before the age of 27.

Desert this week was Key Lime Pie... my pastry wasn't the best I've made but the pie was nice, cooked to near perfection and tasted well... though it's nothing in comparison to the Pavlova I made previously.



All in all... the main I would make again... the desert... it is nice but not nice enough to inspire me to make it a second time... it was just not my thing really.... guess my Sister-in-law will be happy though as she claims that Key lime pie is one of her favorite deserts so I shall send her a huge portion tomorrow.

Hmmm... What should I cook next week??? In the last few weeks my mains have been casserole dishes... I'm feeling the need for something baked/vegetarian/fish. Will have to think hard about this and decide what I most desire. Looks like I'll be making Mother's day meal for everyone... my mom has started hinting along with my sister-in-law and another family friend... hmm the challenge of it all... Imagine they are putting their faith and stomachs into the hands of a culinary novice.

She Must Have Been Crazy!!!



Well my day was interesting to say the least... Please note all names have been altered/ changed (except my own) completely.

Let me paint a picture and start from beginning...

I work with my Local Government and weekly we have a training meeting from between 9 and 10... on Thursdays, my working day starts at 9.

So I get to the office early at 8:40 and I'm seated at my desk minding my own business starting up my PC and logging into the varying applications required to undertake my daily duty. Looking up I can see that all of my colleagues like eager bunnies were seated in the meeting area by 8:50, I continued what I was doing as the meeting starts at 9 not 8:50 and not only that I'm paid from 9 not prior.

Then I hear my name being called... Danielle we would like to start the meeting early!!! Coming from the direction of my line manager...

My response: Tanya... I don't start until 9

In a shocked voice I heard; Danielle!!!!

My response: Well yeah I start at 9 and the meeting is at 9 so I'll be there for then not before.

Guess she was embarrassed that I said that in front of everyone because what happens today??

You guessed it I get called up for saying that to her... and I stood my ground... if you want me to start early change my hours, If you want me to be flexible ask properly, and notify me in time don't do something adhoc and expect me to fall in line. And further more I am not apologizing as there's nothing to apologize for and you should know better than to tell me to work before I even start... and further more if you ask me/ tell me the same thing again my answer will remain the same. Then the other one... it was a double tag team... proceeds to tell me that someone wasn't happy about something I said to them about 3 weeks ago... my response...well if that person (grown ass person at that) can't see it fit to talk to me and you can only now approach me about it frankly I don't care who said what or why.

I think I shocked them... :)

She then proceeds to ask me if I have any issues in my life to perhaps explain why I snapped at her... my response I'm perfectly peachy as though it's any of her business and as if i would confide in her.... They then both proceed to tell me that they have no issue with my work... of course not... you're just embarrassed and want to try and lash out...

I know I may seem in-flexible but trust me... if you're late 5 minutes like I was today....you are asked to sign a sheet of paper to say why and to return the missing time... so with that said my time is and was mines to do as I please... I got held up yesterday and left about 8 minutes late... guess what I did with the sheet I was provided and what I wrote:

When would the time be made up??? : Already made up as I finished at 17:38 yesterday.

She musta been out of her mind... and still is.. if she expects me to apologize for that... Not happening... not with this woman.

A Mother's Faith!

Since joining the blogging community I have found myself quite obsessed with my blog to the point where I check it frequently even on my mobile. I sit at work and whilst on my lunch or a 15 minute tea break I would pull out my phone to see who's been reading, what they have read/ are reading and whether any comments were made. I am quite weirdly fascinated with the traffic on my blog as well; in a weird randomly childlike excited manner. I guess these are the excitements of a newbie blogger.

Though I enjoy the apparent attention I have gained since commencing my blog... I actually gain a lot of personal pleasure from writing on my blog irrespective of whether others read, comment or chose to follow... I am enjoying it as I can freely and wantonly let loose with my thoughts and emotions.

I have been out of touch however for the last few days and actually struggled to write something on Sunday, and have yet to upload the last 2 recipes I attempted. I had a Driving Theory Test to study for which I took today and was actually scared that I would fail... so I therefore forced myself to stay off the internet and to focus my attention on practicing for my theory as even though it won't be the end of the day if I failed it will not only be a disappointment but a waste of money; particularly in these times when others are wanting. I spent the last week and a half frantically practicing daily and even withheld reading any of the varying novels awaiting my attention.

As you may/ may not have noted if you read the ABC game... I am a competitor, I hate losing and this also translates to a fear of failure... I am a perfectionist by nature and always strive hard to please myself and others around me and the thought of facing my twin to say that I would have to retake my theory made me cringe; especially as he has been behind me about it for so long... urging me to study.

And fail I did not I actually breezed through the first half so quickly and had to revisit each question a second time to ensure that I read and answered them correctly prior to submitting my final answers. A weight has been lifted off my shoulders and once more I can focus my attention on my blog and catch up on my reading materials.

Soon after taking my test I called my mother and in a very depressed and childlike voice said to her... "Mom, I didn't pass". My mother's immediate response "you're lying"... I tried convincing her but she was having none of it and insisted that I wasn't being honest and I eventually caved in and admitted the truth.

I inquired: " How can you be so sure that I was lying?"

Her response: "I didn't give birth to a dumb child". Don't you just love mothers!

**I think now that I'm the only one that worries about failing and I guess that's part of human nature that allows us to be vulnerable and appreciative of the strength others can lend/ give. **

It is not as EASY as it seems!


Very early this week I decided that I wanted to cook lamb... I settled on a dish of Moroccan Lamb Tagine served with vegetable cous cous and honey glazed carrots.... followed by a desert of Orange and Passion Fruit Sorbet. It all seemed relatively easy and complimented each other well and I figured it will be fine to do it all on the day as opposed to making the desert the day before.

It was not a great start: first of all I read the recipe for the sorbet slightly wrong and assumed that I would easily be able to make it on the day... not so... luckily on second glance last night I realized that the juice mixture needed to freeze for at least 2 hours prior to mixing in the whisked egg whites. I decided that to ensure that it was made properly that I would need to wake up for 9:00 to get things started. I complicated matters further by going to bed at 2:30 am and felt absolutely shattered by the time my alarm went off signaling that it was time to get up... I dragged myself out of bed and got ready for a morning in the kitchen. I prepared the juice mixture fine.. then thought perfect time to chop and season my meat prior to cooking.

Having done my shopping on Friday evening after work and picked up what I thought was a nice cut of Lamb Shoulder... again I was wrong as what looked like 3lbs of meat turned out to be 1 1/2 lbs meat and 1 1/2 lbs of fat... (yuck) . I spent almost an hour cutting, chopping and getting rid of excess fat then seasoning, another 15-30 minutes was spent chopping up and getting the other ingredients ready. By the time I was finished I was shattered.. just enough time to shower and relax for a short period prior to attacking the desert again.

I whisked the egg whites then added this to the juice mixture trying to fold in the eggs into the juice... as the recipe stated it would not fold for the life of me... It looked like juice with egg whites floating on top. I whisked, beat, all to no avail... finally I had a wise idea how about leaving it in the freezer for 30 minutes or so and see what happens... well what happened... nothing... it started freezing the way it went in... juice with a floating egg white island.

Another brain wave... What about blending it??? I took out my blender and proceeded to blend the mixture together... It finally worked.... finally I had a mixture that was one consistent color... YAY...

Back to my meat I proceeded as per the recipe ensuring all ingredients were halved, as I had less meat than anticipated. It turned out presumably how it should. In all honesty I have never had lamb Tagine but I figured I can try making it because you really can't knock something until you try it right.

After doing so... I am very unsure as to whether I would actually ever attempt this meal in the future. Somehow it did not quite appeal to my pallet. My twin and his girlfriend came by.. and I guess we're two peas in a pod as he didn't like it either. My mom she said she enjoyed it better than the curry so I guess that's saying something about it... as on any given day I would have the curry over the Tagine, and my twins girlfriend liked it to an extent I think.

The desert was the only part of the meal I liked... thankfully something I liked.
